Description

This flaky and tender cod is baked in a zesty lemon and garlic butter sauce that infuses every bite with rich flavor. Perfect for a quick and elegant weeknight dinner.


Ingredients

  • 4 cod fillets (about 6 oz each)
  • Salt and freshly ground black pepper to taste
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh dill (optional)


Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a baking dish.
  2. Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
  3. In a small bowl, combine the melted butter, minced garlic, lemon juice, lemon zest, parsley, and dill (if using).
  4. Place the cod fillets in the prepared baking dish. Pour the butter mixture evenly over the fillets.
  5. Bake for 12-15 minutes, or until the fish flakes easily with a fork. Cooking time may vary based on thickness.
  6. Serve immediately, spooning any extra butter sauce from the dish over the fish.

Notes

You can customize the seasonings to taste. For extra brightness, add a splash of white wine to the butter sauce.
