Description
A light and flaky cod fillet baked with lemon and garlic, then drizzled with a rich, tangy butter sauce. Perfect for a quick weeknight dinner.
Ingredients
- 4 (6 oz) cod fillets
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 lemon, sliced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup unsalted butter
- 2 tbsp fresh lemon juice
- 1 tbsp chopped fresh parsley
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Arrange cod fillets on the baking sheet. Drizzle with olive oil and sprinkle with minced garlic, salt, and pepper.
- Place lemon slices over the top of each fillet.
- Bake for 12-15 minutes, until cod flakes easily with a fork.
- While cod bakes, melt butter in a small saucepan over medium heat. Stir in lemon juice and parsley.
- Remove cod from oven, discard lemon slices, and drizzle with the butter sauce.
- Serve immediately.
Notes
You can customize the seasonings to taste. Add red pepper flakes for heat or capers for extra tang.
