Description

A light and flaky cod fillet baked with lemon and garlic, then drizzled with a rich, tangy butter sauce. Perfect for a quick weeknight dinner.


Ingredients

  • 4 (6 oz) cod fillets
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 lemon, sliced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup unsalted butter
  • 2 tbsp fresh lemon juice
  • 1 tbsp chopped fresh parsley


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Arrange cod fillets on the baking sheet. Drizzle with olive oil and sprinkle with minced garlic, salt, and pepper.
  3. Place lemon slices over the top of each fillet.
  4. Bake for 12-15 minutes, until cod flakes easily with a fork.
  5. While cod bakes, melt butter in a small saucepan over medium heat. Stir in lemon juice and parsley.
  6. Remove cod from oven, discard lemon slices, and drizzle with the butter sauce.
  7. Serve immediately.

Notes

You can customize the seasonings to taste. Add red pepper flakes for heat or capers for extra tang.
