Description

A warm, gooey wheel of brie topped with caramelized roasted plums, fresh thyme, and a drizzle of honey. Perfect for an elegant appetizer or a cozy gathering.


Ingredients

  • 1 (8-ounce) wheel of brie cheese
  • 4 ripe plums, pitted and sliced
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • 2 teaspoons fresh thyme leaves, plus more for garnish
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 sheet puff pastry (optional, for wrapping)
  • 1 egg, beaten (for egg wash, if using puff pastry)
  • Crackers or baguette slices, for serving


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, toss the sliced plums with honey, balsamic vinegar, olive oil, thyme, salt, and pepper. Spread the plums in a single layer on the prepared baking sheet.
  3. Roast the plums for 15-20 minutes, until softened and caramelized, stirring once halfway through. Remove from oven and let cool slightly.
  4. If using puff pastry, roll it out lightly and place the brie in the center. Top the brie with the roasted plums and any juices, then fold the pastry over the top, sealing edges. Brush with beaten egg. If not using pastry, simply place the brie in a small oven-safe dish.
  5. Reduce oven temperature to 375°F (190°C). Bake the brie (wrapped or unwrapped) for 15-20 minutes, until the cheese is melted and warm.
  6. Let the baked brie rest for 5 minutes, then garnish with fresh thyme leaves. Serve immediately with crackers or baguette slices.

Notes

You can customize the seasonings to taste. For a nutty twist, sprinkle chopped walnuts or pecans over the top before baking. If you prefer a milder flavor, use ripe but firm plums.
