Description

A warm, gooey wheel of brie wrapped in golden puff pastry, topped with sweet caramelized apples and fresh thyme. Perfect for an elegant appetizer or a cozy fall gathering.


Ingredients

  • 1 sheet puff pastry, thawed
  • 1 (8-ounce) wheel of brie cheese
  • 2 tablespoons unsalted butter
  • 2 medium apples, peeled, cored, and sliced (such as Honeycrisp or Granny Smith)
  • 2 tablespoons brown sugar
  • 1 teaspoon fresh thyme leaves, plus more for garnish
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon honey (for drizzling)
  • Crackers or sliced baguette, for serving


Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out the puff pastry on a lightly floured surface. Place the brie in the center of the pastry.
  3. In a skillet over medium heat, melt the butter. Add the apple slices and cook until they begin to soften, about 3-4 minutes. Stir in the brown sugar and thyme, and cook until the apples are caramelized, about 3 more minutes. Remove from heat and let cool slightly.
  4. Spoon the caramelized apple mixture on top of the brie wheel, spreading evenly.
  5. Fold the puff pastry over the brie, pleating and pinching to seal it completely. Trim excess pastry if desired. Brush the top with the beaten egg.
  6. Place the wrapped brie on the prepared baking sheet. Bake for 20-25 minutes, until the pastry is golden brown and puffed.
  7. Let cool for 5 minutes. Drizzle with honey and sprinkle with fresh thyme leaves before serving. Serve warm with crackers or sliced baguette.

Notes

You can customize the seasonings to taste. For extra flavor, add a pinch of cinnamon or nutmeg to the apple mixture.
