Ingredients
- 2 slices of sourdough bread
- 1 ripe avocado
- 1/2 cup cherry tomatoes, halved
- 1/4 cup crumbled feta cheese
- 2 tablespoons dried cranberries
- 2 tablespoons walnuts, chopped and toasted
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: red pepper flakes or fresh basil for garnish
Instructions
- Toast the sourdough bread slices until golden and crispy.
- While the bread is toasting, halve the avocado, remove the pit, and scoop the flesh into a small bowl. Mash it with a fork to your desired consistency, then season with salt and pepper.
- In a small skillet over medium heat, add the walnuts and toast for 2-3 minutes until fragrant. Remove from heat and set aside.
- Spread the mashed avocado evenly onto each toast slice.
- Top with halved cherry tomatoes, crumbled feta, dried cranberries, and toasted walnuts.
- Drizzle with olive oil and season with additional salt and pepper if desired. Garnish with red pepper flakes or fresh basil if using.
- Serve immediately and enjoy.
