Description

A vibrant and crunchy twist on classic avocado toast, topped with creamy feta, sweet cherry tomatoes, tangy dried cranberries, and toasted walnuts for a burst of flavor and texture in every bite.


Ingredients

  • 2 slices of sourdough bread
  • 1 ripe avocado
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons dried cranberries
  • 2 tablespoons walnuts, chopped and toasted
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: red pepper flakes or fresh basil for garnish


Instructions

  1. Toast the sourdough bread slices until golden and crispy.
  2. While the bread is toasting, halve the avocado, remove the pit, and scoop the flesh into a small bowl. Mash it with a fork to your desired consistency, then season with salt and pepper.
  3. In a small skillet over medium heat, add the walnuts and toast for 2-3 minutes until fragrant. Remove from heat and set aside.
  4. Spread the mashed avocado evenly onto each toast slice.
  5. Top with halved cherry tomatoes, crumbled feta, dried cranberries, and toasted walnuts.
  6. Drizzle with olive oil and season with additional salt and pepper if desired. Garnish with red pepper flakes or fresh basil if using.
  7. Serve immediately and enjoy.

Notes

You can customize the seasonings to taste. For extra protein, add a poached egg or smoked salmon.
