Juicy chicken breasts stuffed with tender asparagus and melted cheese, baked to golden perfection. A simple yet elegant dish perfect for weeknight dinners or special occasions.
Ingredients
- 4 boneless, skinless chicken breasts
- 12 asparagus spears, trimmed
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat oven to 400°F (200°C).
- Pound chicken breasts to even thickness. Season inside and out with salt, pepper, paprika, and thyme.
- Blanch asparagus in boiling water for 2 minutes, then drain and cool.
- Mix mozzarella and Parmesan with minced garlic.
- Place 3 asparagus spears and a portion of cheese mixture on each chicken breast. Roll up tightly and secure with toothpicks.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken rolls for 2-3 minutes per side until golden.
- Transfer skillet to preheated oven and bake for 20-25 minutes until chicken is cooked through and cheese is bubbly.
- Remove toothpicks and let rest for 5 minutes before slicing.
