Description
Baked apples filled with a sweet and savory mixture of brie, dried cranberries, and pecans, topped with a crunchy maple pecan streusel. A perfect fall dessert or side dish.
Ingredients
- 4 large baking apples (Honeycrisp or Gala)
- 4 oz brie, rind removed and cut into small pieces
- 1/2 cup dried cranberries
- 1/2 cup chopped pecans
- 2 tablespoons maple syrup
- 2 tablespoons brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 tablespoons unsalted butter, softened
- 1/2 cup old-fashioned oats
- 2 tablespoons all-purpose flour
Instructions
- Preheat oven to 375°F (190°C). Core apples and hollow out the center, leaving about 1/2 inch of flesh at the bottom. Score the skin around the equator to prevent bursting.
- In a small bowl, mix brie, cranberries, and 1/4 cup pecans. Stuff the mixture into the apples.
- In another bowl, combine remaining pecans, oats, flour, brown sugar, cinnamon, salt, and butter. Mix until crumbly. Stir in maple syrup. Top each apple with the crunch mixture.
- Place apples in a baking dish and add 1/4 cup water to the bottom. Bake for 30-35 minutes until apples are tender and topping is golden. Serve warm.
