A moist and tender coffee cake loaded with fresh apples and a luscious cream cheese swirl, perfect for brunch or an afternoon treat.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 2 cups peeled and diced apples (about 2 medium)
- For the filling: 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
- For the topping: 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 cup cold unsalted butter, cut into small pieces
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan or round cake pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then vanilla. Mix in sour cream.
- Gradually add dry ingredients to wet mixture, mixing until just combined. Fold in diced apples.
- In a separate bowl, beat cream cheese, sugar, egg, and vanilla until smooth.
- Spread half of the batter into the prepared pan. Spoon cream cheese mixture over the batter, then top with remaining batter, spreading carefully.
- In a small bowl, mix topping ingredients with a fork until crumbly. Sprinkle over the top of the cake.
- Bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean. Cool in pan for 15 minutes, then remove from pan to cool completely.
Notes
You can customize the seasonings to taste. For extra apple flavor, toss apples with 1 teaspoon cinnamon before adding to batter.
