Description

A quick, healthy, and flavorful vegetarian stir-fry featuring tender zucchini and protein-packed chickpeas in a savory garlic-ginger sauce.


Ingredients

  • 2 medium zucchinis, sliced into half-moons
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 1 tsp honey or maple syrup
  • 1/2 tsp red pepper flakes (optional)
  • 2 green onions, chopped
  • Salt and black pepper to taste


Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add garlic, ginger, and red pepper flakes, stirring for 30 seconds until fragrant.
  3. Add zucchini and bell pepper, stir-frying for 5-7 minutes until slightly tender.
  4. Stir in chickpeas, soy sauce, sesame oil, and honey, cooking for another 3-4 minutes.
  5. Season with salt and pepper, then garnish with green onions before serving.
