Description
A creamy, tangy whipped feta dip topped with sweet, roasted strawberries, perfect for spreading on toast or serving as an appetizer.
Ingredients
- 8 oz feta cheese, crumbled
- 1/2 cup Greek yogurt
- 2 tbsp olive oil
- 1 lb fresh strawberries, hulled and halved
- 2 tbsp honey
- 1 tsp balsamic vinegar
- Fresh mint leaves for garnish
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Toss strawberries with honey and balsamic vinegar, then spread on a baking sheet. Roast for 15-20 minutes until softened.
- In a food processor, combine feta, Greek yogurt, and olive oil. Blend until smooth and creamy, scraping down sides as needed.
- Spread whipped feta on a serving plate, top with roasted strawberries, garnish with mint, and season with salt and pepper. Serve with crusty bread or crackers.
