Description

A festive and savory-sweet appetizer featuring roasted sweet potato slices topped with creamy cheese and tangy cranberry sauce.


Ingredients

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 4 ounces cream cheese, softened
  • 1/2 cup whole-berry cranberry sauce
  • 1/4 cup chopped pecans
  • Fresh thyme leaves for garnish


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, salt, pepper, and garlic powder. Arrange in a single layer on the baking sheet and roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
  3. Let rounds cool slightly, then spread a dollop of cream cheese on each round.
  4. Top with a small spoonful of cranberry sauce, sprinkle with chopped pecans, and garnish with fresh thyme. Serve warm or at room temperature.
