A festive and savory-sweet appetizer featuring roasted sweet potato rounds topped with melted brie, tart cranberry sauce, crunchy pecans, and a spicy honey drizzle.
Ingredients
- 2 large sweet potatoes, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 4 ounces brie cheese, sliced into small pieces
- 1/2 cup whole berry cranberry sauce
- 1/2 cup pecans, toasted and roughly chopped
- 1/4 cup honey
- 1/2 teaspoon red pepper flakes
Instructions
- Preheat the oven to 400°F (200°C). Toss the sweet potato rounds with olive oil, salt, and pepper, then arrange in a single layer on a baking sheet. Roast for 20-25 minutes until tender and slightly golden.
- Remove the sweet potatoes from the oven and top each round with a piece of brie. Return to the oven for 3-5 minutes until the cheese is melted.
- While the sweet potatoes roast, combine the honey and red pepper flakes in a small saucepan over low heat. Warm for 2-3 minutes, then remove from heat.
- Top each sweet potato round with a spoonful of cranberry sauce and a sprinkle of toasted pecans. Drizzle with the hot honey mixture before serving.
