Description

A festive and savory appetizer featuring roasted sweet potato slices topped with creamy blue cheese, tart cranberries, and crunchy pecans.


Ingredients

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled blue cheese
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon honey (optional)


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet. Roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
  3. Remove from oven. Top each round with blue cheese, cranberries, and pecans. Return to oven for 3-5 minutes until cheese softens.
  4. Garnish with thyme and drizzle with honey if desired. Serve warm.
