Description

A rich and savory pasta dish featuring sun-dried tomatoes, fresh spinach, and garlic in a creamy sauce, perfect for a quick yet indulgent meal.


Ingredients

  • 12 oz pasta (such as penne or fettuccine)
  • 1 cup sun-dried tomatoes in oil, drained and chopped
  • 3 cloves garlic, minced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh basil for garnish


Instructions

  1. Cook the pasta according to package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add chopped sun-dried tomatoes and cook for another 2 minutes, stirring occasionally.
  4. Stir in fresh spinach and cook until wilted, about 3-4 minutes.
  5. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and the sauce thickens slightly.
  6. Add the cooked pasta to the skillet, tossing to coat evenly in the sauce. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh basil.
