Description

A savory pasta dish featuring sun-dried tomatoes and mushrooms tossed in a rich garlic basil sauce, perfect for a quick and flavorful meal.


Ingredients

  • 12 oz pasta (such as fettuccine or penne)
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup vegetable broth
  • 1/4 cup fresh basil, chopped
  • Salt and black pepper to taste
  • Grated Parmesan cheese for serving


Instructions

  1. Cook pasta according to package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.
  3. Add mushrooms and sun-dried tomatoes to the skillet, cooking for 5-7 minutes until mushrooms are tender.
  4. Pour in heavy cream and vegetable broth, stirring to combine. Simmer for 5 minutes until the sauce thickens slightly.
  5. Stir in fresh basil and season with salt and black pepper.
  6. Add cooked pasta to the skillet, tossing to coat evenly in the sauce. Serve hot with grated Parmesan cheese.
