Ingredients
- 1 lb flank steak, seasoned with salt and pepper
- 2 ears of corn, husked
- 1 avocado, sliced
- 1 cup cooked quinoa or rice
- 1/2 cup sour cream
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1 clove garlic, minced
- 1/2 red onion, diced
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat grill or skillet over medium-high heat. Grill steak for 4-5 minutes per side until desired doneness, then let rest before slicing.
- Brush corn with olive oil and grill for 10-12 minutes, turning occasionally, until charred. Cut kernels off the cob.
- In a small bowl, mix sour cream, cilantro, lime juice, garlic, and a pinch of salt to make the cilantro cream sauce.
- Assemble bowls by dividing quinoa or rice, topped with sliced steak, roasted corn, avocado, and red onion. Drizzle with cilantro cream sauce.
- Serve immediately, garnished with extra cilantro if desired.
