A quick and healthy one-pan meal featuring lean ground turkey, fresh spinach, and savory seasonings, perfect for a weeknight dinner.
Ingredients
- 1 lb lean ground turkey
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups fresh spinach
- 1 can (14.5 oz) diced tomatoes
- 1 tsp dried oregano
- 1/2 tsp paprika
- Salt and black pepper to taste
- 1/2 cup shredded mozzarella cheese (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 3-4 minutes.
- Add ground turkey to the skillet, breaking it up with a spoon. Cook until browned and no longer pink, about 6-8 minutes. Stir in minced garlic and cook for 1 minute more.
- Add diced tomatoes, dried oregano, paprika, salt, and pepper. Stir to combine and simmer for 5 minutes.
- Fold in fresh spinach and cook until wilted, about 2-3 minutes. If using, sprinkle mozzarella cheese on top and cover until melted, about 2 minutes. Serve hot.
