Description

A creamy, savory twist on classic grilled cheese, featuring a rich spinach and artichoke filling melted between buttery, golden bread slices.


Ingredients

  • 8 slices sourdough bread
  • 2 cups fresh spinach, chopped
  • 1 cup canned artichoke hearts, drained and chopped
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 4 tablespoons unsalted butter, softened
  • Salt and black pepper to taste


Instructions

  1. In a medium bowl, combine spinach, artichoke hearts, mozzarella, cream cheese, Parmesan, garlic, red pepper flakes, salt, and pepper. Mix until well blended.
  2. Spread butter on one side of each bread slice. Place 4 slices buttered-side down on a clean surface. Divide the spinach-artichoke mixture evenly among them, spreading to edges. Top with remaining bread slices, buttered-side up.
  3. Heat a skillet or griddle over medium heat. Cook sandwiches for 3-4 minutes per side, pressing gently with a spatula, until bread is golden brown and cheese is melted. Serve immediately.
