Description

A comforting and nutritious one-pot dish featuring tender spinach and creamy white beans in a savory garlic and herb sauce.


Ingredients

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 small onion, diced
  • 2 (15-ounce) cans cannellini beans, drained and rinsed
  • 6 cups fresh spinach
  • 1 cup vegetable broth
  • 1/2 cup heavy cream or coconut milk
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Grated Parmesan cheese for serving (optional)


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and sauté until translucent, about 5 minutes.
  2. Stir in minced garlic and cook for 1 minute until fragrant.
  3. Add cannellini beans, vegetable broth, thyme, and red pepper flakes (if using). Simmer for 10 minutes.
  4. Stir in spinach and cook until wilted, about 3-4 minutes.
  5. Pour in heavy cream or coconut milk and simmer for another 5 minutes until slightly thickened.
  6. Season with salt and black pepper to taste. Serve warm, topped with Parmesan cheese if desired.
