A comforting and nutritious one-pot dish featuring tender spinach and creamy white beans in a savory garlic and herb sauce.
Ingredients
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 small onion, diced
- 2 (15-ounce) cans cannellini beans, drained and rinsed
- 6 cups fresh spinach
- 1 cup vegetable broth
- 1/2 cup heavy cream or coconut milk
- 1 teaspoon dried thyme
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Add cannellini beans, vegetable broth, thyme, and red pepper flakes (if using). Simmer for 10 minutes.
- Stir in spinach and cook until wilted, about 3-4 minutes.
- Pour in heavy cream or coconut milk and simmer for another 5 minutes until slightly thickened.
- Season with salt and black pepper to taste. Serve warm, topped with Parmesan cheese if desired.
