Description

A quick, nutritious, and flavorful one-pan dish featuring tender spinach and creamy white beans in a garlic-infused olive oil base.


Ingredients

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • 8 ounces fresh spinach, washed
  • 1/2 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • 1 tablespoon lemon juice
  • Grated Parmesan cheese for serving (optional)


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes, sauté for 1-2 minutes until fragrant.
  2. Add the drained cannellini beans to the skillet. Cook for 3-4 minutes, stirring occasionally, until beans are warmed through.
  3. Gradually add fresh spinach to the skillet, stirring until wilted. Season with salt and black pepper to taste.
  4. Remove from heat and stir in lemon juice. Serve warm, topped with grated Parmesan if desired.
