A quick, nutritious, and flavorful one-pan dish featuring tender spinach and creamy white beans in a garlic-infused olive oil base.
Ingredients
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 (15-ounce) can cannellini beans, drained and rinsed
- 8 ounces fresh spinach, washed
- 1/2 teaspoon red pepper flakes
- Salt and black pepper to taste
- 1 tablespoon lemon juice
- Grated Parmesan cheese for serving (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes, sauté for 1-2 minutes until fragrant.
- Add the drained cannellini beans to the skillet. Cook for 3-4 minutes, stirring occasionally, until beans are warmed through.
- Gradually add fresh spinach to the skillet, stirring until wilted. Season with salt and black pepper to taste.
- Remove from heat and stir in lemon juice. Serve warm, topped with grated Parmesan if desired.
