Description

A zesty and aromatic fish dish featuring white fish fillets baked with Mediterranean spices, tomatoes, olives, and herbs for a flavorful and healthy meal.


Ingredients

  • 4 white fish fillets (such as cod or tilapia)
  • 2 tablespoons olive oil
  • 1 lemon, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh parsley, chopped for garnish


Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
  2. Place the fish fillets in the baking dish. Drizzle with olive oil and season with salt, black pepper, smoked paprika, red pepper flakes, and oregano.
  3. Scatter the cherry tomatoes, Kalamata olives, minced garlic, and lemon slices around and on top of the fish.
  4. Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
  5. Remove from the oven, garnish with fresh parsley, and serve immediately.
