A zesty and aromatic fish dish featuring white fish fillets baked with Mediterranean spices, tomatoes, olives, and herbs for a flavorful and healthy meal.
Ingredients
- 4 white fish fillets (such as cod or tilapia)
- 2 tablespoons olive oil
- 1 lemon, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Preheat the oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
- Place the fish fillets in the baking dish. Drizzle with olive oil and season with salt, black pepper, smoked paprika, red pepper flakes, and oregano.
- Scatter the cherry tomatoes, Kalamata olives, minced garlic, and lemon slices around and on top of the fish.
- Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
- Remove from the oven, garnish with fresh parsley, and serve immediately.
