Description

A vibrant and protein-packed bowl featuring tender, spicy garlic-marinated chicken served over fluffy rice, creamy hummus, and a refreshing cucumber salad.


Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 3 tbsp olive oil, divided
  • 4 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (adjust to taste)
  • 1 tsp ground cumin
  • Salt and black pepper to taste
  • 1 cup cooked rice (white or brown)
  • 1 cup prepared hummus
  • 1 large cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice
  • 1 tbsp plain yogurt or tahini (optional, for drizzling)


Instructions

  1. In a bowl, combine chicken pieces with 2 tbsp olive oil, minced garlic, smoked paprika, cayenne, cumin, salt, and black pepper. Marinate for at least 15 minutes.
  2. Heat the remaining 1 tbsp olive oil in a skillet over medium-high heat. Add the marinated chicken and cook for 6-8 minutes, stirring occasionally, until fully cooked and slightly charred.
  3. While chicken cooks, prepare the cucumber salad by mixing diced cucumber, red onion, parsley, lemon juice, and a pinch of salt in a bowl.
  4. To assemble the bowls, divide the cooked rice among four bowls. Top each with a scoop of hummus, the spicy garlic chicken, and a generous portion of cucumber salad.
  5. Drizzle with yogurt or tahini if desired, and serve immediately.
