Description

A vibrant and flavorful bowl featuring tender, spicy garlic-marinated chicken served over creamy hummus and a refreshing cucumber salad, perfect for a quick and healthy meal.


Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (adjust for heat)
  • 1 tsp ground cumin
  • Salt and black pepper to taste
  • 1 cup hummus (store-bought or homemade)
  • 1 large cucumber, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice
  • Cooked quinoa or rice for serving (optional)


Instructions

  1. In a bowl, combine olive oil, minced garlic, smoked paprika, cayenne pepper, cumin, salt, and black pepper. Add chicken pieces and toss to coat. Marinate for at least 15 minutes.
  2. While chicken marinates, prepare the cucumber salad by mixing sliced cucumber, red onion, parsley, and lemon juice in a bowl. Season with a pinch of salt and set aside.
  3. Heat a skillet over medium-high heat. Add the marinated chicken and cook for 6-8 minutes, stirring occasionally, until fully cooked and slightly charred.
  4. To assemble, spread hummus at the bottom of each bowl. Top with cooked chicken, cucumber salad, and optional quinoa or rice. Serve immediately.
