Ingredients
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (adjust for heat)
- 1 tsp ground cumin
- Salt and black pepper to taste
- 1 cup hummus (store-bought or homemade)
- 1 large cucumber, thinly sliced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 2 tbsp lemon juice
- Cooked quinoa or rice for serving (optional)
Instructions
- In a bowl, combine olive oil, minced garlic, smoked paprika, cayenne pepper, cumin, salt, and black pepper. Add chicken pieces and toss to coat. Marinate for at least 15 minutes.
- While chicken marinates, prepare the cucumber salad by mixing sliced cucumber, red onion, parsley, and lemon juice in a bowl. Season with a pinch of salt and set aside.
- Heat a skillet over medium-high heat. Add the marinated chicken and cook for 6-8 minutes, stirring occasionally, until fully cooked and slightly charred.
- To assemble, spread hummus at the bottom of each bowl. Top with cooked chicken, cucumber salad, and optional quinoa or rice. Serve immediately.
