A creamy, savory pasta dish featuring sun-dried tomatoes and fresh spinach in a rich, garlic-infused sauce.
Ingredients
- 8 oz spaghetti
- 1 cup sun-dried tomatoes in oil, drained and chopped
- 3 cloves garlic, minced
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and black pepper to taste
- Fresh basil for garnish
Instructions
- Cook spaghetti according to package directions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sun-dried tomatoes, sauté for 2-3 minutes until fragrant.
- Stir in heavy cream and bring to a simmer. Add Parmesan cheese, stirring until melted and sauce thickens slightly.
- Add fresh spinach to the sauce and cook until wilted, about 2 minutes. Season with salt and pepper.
- Toss the cooked spaghetti in the sauce until well coated. Serve hot, garnished with fresh basil.
