Ingredients
- 12 oz spaghetti
- 1 cup sun-dried tomatoes in oil, drained and chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 4 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and black pepper to taste
- Fresh basil for garnish
Instructions
- Cook spaghetti according to package instructions until al dente, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sun-dried tomatoes, sauté for 2-3 minutes until fragrant.
- Pour in heavy cream, bring to a simmer, and cook for 5 minutes until slightly thickened.
- Stir in spinach and cook until wilted, about 2 minutes.
- Add cooked spaghetti to the skillet, toss to coat in the sauce, then mix in Parmesan cheese until melted and creamy.
- Season with salt and pepper, garnish with fresh basil, and serve immediately.
