Description

A creamy, savory pasta dish featuring tender chicken, sun-dried tomatoes, and fresh spinach in a rich garlic-infused sauce, served over spaghetti.


Ingredients

  • 8 oz spaghetti
  • 2 boneless, skinless chicken breasts, cubed
  • 1/2 cup sun-dried tomatoes (in oil, drained and chopped)
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and black pepper to taste


Instructions

  1. Cook spaghetti according to package directions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and oregano, then cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
  3. In the same skillet, add garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  4. Pour in chicken broth and heavy cream, stirring to combine. Simmer for 5 minutes until slightly thickened.
  5. Stir in Parmesan cheese until melted, then add spinach and cooked chicken. Cook until spinach wilts, about 2 minutes.
  6. Toss the sauce with cooked spaghetti until well coated. Serve immediately.
