Description

A creamy and flavorful pasta dish featuring tender chicken, fresh spinach, and a rich sun-dried tomato cream sauce, all tossed with spaghetti for a comforting meal.


Ingredients

  • 8 oz spaghetti
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup sun-dried tomatoes in oil, drained and chopped
  • 3 cloves garlic, minced
  • 1 cup fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and black pepper to taste


Instructions

  1. Cook spaghetti according to package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken pieces, season with salt, pepper, and oregano, and cook until browned and cooked through, about 6-8 minutes.
  3. Add minced garlic and sun-dried tomatoes to the skillet, sauté for 2 minutes until fragrant.
  4. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and the sauce thickens slightly.
  5. Add fresh spinach to the sauce, stirring until wilted, about 2 minutes.
  6. Toss the cooked spaghetti into the skillet with the sauce until evenly coated. Serve hot.
