Description

A comforting and aromatic soup featuring creamy white beans, smoky paprika, and fresh herbs, perfect for a cozy meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 4 cups vegetable broth
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh rosemary, chopped


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Stir in garlic and smoked paprika, cooking for 1 minute until fragrant.
  3. Pour in vegetable broth, then add white beans, thyme, and bay leaf. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 20 minutes to let flavors meld.
  5. Remove bay leaf. Use an immersion blender to partially blend the soup for a creamy texture, or leave as is for chunkier soup.
  6. Season with salt and pepper. Stir in fresh parsley and rosemary just before serving.
