Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 ripe avocados, diced
- 8 large butter lettuce leaves
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat. Add shrimp, chili powder, salt, and pepper. Cook for 3-4 minutes per side until pink and opaque. Remove from heat and let cool slightly, then chop into bite-sized pieces.
- In a medium bowl, combine chopped shrimp, diced avocado, red onion, cilantro, and lime juice. Gently toss to mix, being careful not to mash the avocado.
- Spoon the shrimp and avocado mixture evenly into the butter lettuce leaves. Serve immediately.
