A vibrant, fresh, and healthy bowl featuring juicy shrimp, creamy avocado, and a sweet-spicy mango salsa, all drizzled with a zesty lime-chili sauce.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 ripe avocados, sliced
- 1 mango, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- 2 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- 2 cups cooked quinoa or rice
Instructions
- In a bowl, combine mango, red onion, jalapeño, cilantro, and juice of 1 lime to make the salsa. Set aside.
- Season shrimp with chili powder, cumin, salt, and pepper. Heat olive oil in a skillet over medium-high heat and cook shrimp for 2-3 minutes per side until pink.
- Whisk together juice of 1 lime, 1 tbsp olive oil, a pinch of chili powder, and salt to make the lime-chili sauce.
- Assemble bowls with quinoa or rice, top with shrimp, avocado slices, and mango salsa. Drizzle with lime-chili sauce.
