Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 ripe avocados, sliced
- 1 cup cooked quinoa or rice
- 1 mango, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- 2 tbsp olive oil
- 1 tsp chili powder
- Salt and pepper to taste
- 1/4 cup Greek yogurt or sour cream
- 1 tbsp honey or agave
Instructions
- In a bowl, combine diced mango, red onion, jalapeño, cilantro, and juice of 1 lime to make the salsa. Set aside.
- Season shrimp with chili powder, salt, and pepper. Heat olive oil in a skillet over medium-high heat and cook shrimp for 2-3 minutes per side until pink and opaque.
- In a small bowl, mix Greek yogurt, juice of 1 lime, honey, and a pinch of chili powder to create the lime-chili sauce.
- Assemble bowls by dividing quinoa or rice among four bowls. Top with shrimp, avocado slices, and mango salsa.
- Drizzle with lime-chili sauce and serve immediately.
