Ingredients
- 1 lb ground beef
- 8 oz cremini mushrooms, sliced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- 2 cups beef broth
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and black pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
- Add diced onion and sliced mushrooms to the skillet. Cook for 5-7 minutes until vegetables are softened and mushrooms release their moisture. Stir in minced garlic and cook for 1 minute until fragrant.
- Stir in rice, dried thyme, paprika, salt, and pepper. Pour in beef broth and bring to a boil. Reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and liquid is absorbed. Fluff with a fork, garnish with parsley, and serve hot.
