A quick and healthy side dish featuring tender spinach and savory mushrooms sautéed with garlic and olive oil.
Ingredients
- 1 lb fresh spinach, washed and stems removed
- 8 oz cremini mushrooms, sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- Salt and black pepper to taste
- 1 tbsp lemon juice
- 2 tbsp grated Parmesan cheese (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced mushrooms and sauté for 5-7 minutes until browned and tender.
- Add minced garlic and cook for 1 minute until fragrant.
- Add fresh spinach in batches, stirring until wilted, about 3-4 minutes.
- Season with salt, black pepper, and lemon juice, then toss to combine.
- Remove from heat, sprinkle with Parmesan cheese if desired, and serve immediately.
