A comforting twist on classic meatloaf, inspired by Salisbury steak, featuring a savory beef loaf baked to perfection and smothered in a rich, creamy mushroom gravy.
Ingredients
- 1 1/2 pounds ground beef (80/20 blend)
- 1/2 cup breadcrumbs
- 1 large egg, beaten
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 1 tablespoon olive oil
- 8 ounces sliced cremini mushrooms
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups beef broth
- 1/2 cup heavy cream
- 1 tablespoon Dijon mustard
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). In a large bowl, combine ground beef, breadcrumbs, egg, onion, garlic, Worcestershire sauce, thyme, salt, and pepper. Mix gently until just combined.
- Shape the mixture into a loaf and place in a baking dish. Bake for 30-35 minutes, or until the internal temperature reaches 160°F (71°C).
- While the meatloaf bakes, heat olive oil in a skillet over medium heat. Add mushrooms and cook until browned and tender, about 5-7 minutes. Remove mushrooms and set aside.
- In the same skillet, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes until golden. Gradually whisk in beef broth until smooth.
- Stir in heavy cream, Dijon mustard, and cooked mushrooms. Simmer for 5-7 minutes, stirring occasionally, until the gravy thickens. Season with salt and pepper to taste.
- Remove meatloaf from oven and let rest for 5 minutes. Slice and serve topped with creamy mushroom gravy, garnished with fresh parsley.
