Description

A vibrant and healthy bowl featuring roasted seasonal vegetables, creamy hummus, and fresh herbs, perfect for a quick lunch or dinner.


Ingredients

  • 2 cups mixed vegetables (e.g., bell peppers, zucchini, carrots, broccoli), chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 1 cup hummus (store-bought or homemade)
  • 1/2 cup cooked quinoa or brown rice
  • Fresh parsley or cilantro for garnish
  • Lemon wedges for serving


Instructions

  1. Preheat the oven to 400°F (200°C). Toss the chopped vegetables with olive oil, garlic powder, paprika, salt, and pepper on a baking sheet.
  2. Roast the vegetables for 20-25 minutes, stirring halfway, until tender and slightly charred.
  3. While the vegetables roast, prepare the quinoa or brown rice according to package instructions if not already cooked.
  4. Assemble the bowls by dividing the quinoa or rice among four bowls, topping with roasted vegetables and a generous scoop of hummus.
  5. Garnish with fresh herbs and serve with lemon wedges on the side.
