Description
A stunning twist on the classic Caprese salad, featuring roasted cherry tomatoes layered with fresh mozzarella and basil, drizzled with balsamic glaze.
Ingredients
- 1 pint cherry tomatoes
- 8 oz fresh mozzarella cheese, sliced into rounds
- 1/4 cup fresh basil leaves
- 2 tbsp extra virgin olive oil
- 1 tsp dried oregano
- Salt and black pepper to taste
- 2 tbsp balsamic glaze
Instructions
- Preheat oven to 400°F (200°C). Toss cherry tomatoes with olive oil, oregano, salt, and pepper, then roast for 15-20 minutes until softened.
- Let tomatoes cool slightly. On a serving plate, layer a mozzarella round, a few roasted tomatoes, and a basil leaf. Repeat to form 4 towers.
- Drizzle towers with balsamic glaze and any remaining roasting juices. Serve immediately.
