A festive and savory-sweet appetizer featuring roasted sweet potato slices topped with creamy whipped goat cheese, tart dried cranberries, and crunchy toasted pecans.
Ingredients
- 2 large sweet potatoes, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- 4 ounces goat cheese, softened
- 2 ounces cream cheese, softened
- 2 tablespoons honey, plus extra for drizzling
- 1/4 cup dried cranberries
- 1/4 cup pecans, toasted and chopped
- Fresh thyme leaves for garnish
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss sweet potato rounds with olive oil, smoked paprika, salt, and pepper. Arrange in a single layer on the baking sheet. Roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
- While potatoes roast, combine goat cheese, cream cheese, and honey in a bowl. Whip with a hand mixer or whisk until smooth and fluffy.
- Spread or pipe whipped goat cheese onto cooled sweet potato rounds. Top with cranberries, pecans, a drizzle of honey, and thyme. Serve immediately.
