Description

A simple yet elegant side dish featuring crispy roasted sweet potato rounds topped with creamy feta cheese and a drizzle of honey for a perfect sweet-savory balance.


Ingredients

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons honey
  • Fresh thyme leaves for garnish


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss sweet potato rounds with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  3. Arrange rounds in a single layer on the baking sheet. Roast for 25-30 minutes, flipping halfway, until tender and golden brown.
  4. Remove from oven and immediately sprinkle with crumbled feta cheese. Drizzle honey over the top and garnish with fresh thyme.
  5. Serve warm as a side dish or appetizer.
