A sweet and creamy breakfast or brunch toast featuring roasted strawberries and fluffy whipped ricotta on toasted artisan bread.
Ingredients
- 1 cup fresh strawberries, hulled and halved
- 1 tablespoon honey
- 1 teaspoon balsamic vinegar
- 1 cup whole milk ricotta cheese
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- 4 slices thick-cut artisan bread (such as sourdough or brioche)
- 1 tablespoon olive oil
- Fresh mint leaves for garnish (optional)
- Extra honey for drizzling
Instructions
- Preheat oven to 400°F (200°C). Toss strawberries with honey and balsamic vinegar on a baking sheet. Roast for 15-20 minutes until softened and juicy. Set aside.
- In a food processor or mixing bowl, combine ricotta, powdered sugar, and vanilla extract. Whip until smooth and fluffy, about 2-3 minutes.
- Brush bread slices with olive oil and toast in a skillet or toaster until golden and crisp.
- Spread a generous layer of whipped ricotta on each toast. Top with roasted strawberries and their juices.
- Garnish with fresh mint leaves and a drizzle of honey. Serve immediately.
