A sweet and creamy breakfast or snack featuring roasted strawberries over fluffy whipped ricotta on toasted bread.
Ingredients
- 1 cup fresh strawberries, hulled and halved
- 1 tablespoon honey
- 1 teaspoon balsamic vinegar
- 1 cup whole milk ricotta cheese
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- 4 slices thick-cut bread (such as brioche or sourdough)
- Fresh mint leaves for garnish (optional)
- Extra honey for drizzling
Instructions
- Preheat the oven to 400°F (200°C). Toss strawberries with honey and balsamic vinegar on a baking sheet. Roast for 15-20 minutes until softened and juicy.
- While strawberries roast, combine ricotta, powdered sugar, and vanilla extract in a bowl. Whip with a hand mixer or whisk until light and fluffy, about 2-3 minutes.
- Toast the bread slices until golden and crisp.
- Spread a generous layer of whipped ricotta on each toast. Top with roasted strawberries and their juices.
- Garnish with fresh mint leaves if desired and drizzle with extra honey. Serve immediately.
