Description
A vibrant side dish featuring tender roasted carrots atop creamy whipped ricotta, finished with a spicy-sweet hot honey drizzle.
Ingredients
- 1 lb rainbow carrots, trimmed and halved lengthwise
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- 1 cup whole milk ricotta cheese
- 2 tbsp heavy cream
- 1 tbsp lemon zest
- 1/4 cup honey
- 1 tsp red pepper flakes
- Fresh thyme leaves for garnish
Instructions
- Preheat oven to 400°F (200°C). Toss carrots with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until caramelized and tender.
- While carrots roast, combine ricotta, heavy cream, and lemon zest in a food processor. Blend until smooth and fluffy, about 2 minutes. Season with a pinch of salt.
- In a small saucepan, warm honey over low heat. Stir in red pepper flakes and let infuse for 5 minutes, then remove from heat.
- Spread whipped ricotta on a serving platter. Arrange roasted carrots over the ricotta, drizzle with hot honey, and garnish with fresh thyme.
