A vibrant and elegant side dish featuring tender roasted carrots served over creamy whipped ricotta and drizzled with spicy-sweet hot honey.
Ingredients
- 1 pound rainbow carrots, trimmed and halved lengthwise
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 1 cup whole milk ricotta cheese
- 2 tablespoons heavy cream
- 1 tablespoon lemon juice
- 1/4 cup honey
- 1/2 teaspoon red pepper flakes
- Fresh thyme or parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C). Toss the carrots with olive oil, smoked paprika, garlic powder, salt, and pepper on a baking sheet.
- Roast the carrots for 25-30 minutes, flipping halfway, until tender and caramelized.
- While carrots roast, combine ricotta, heavy cream, and lemon juice in a food processor. Blend until smooth and creamy, about 1-2 minutes. Season with salt to taste.
- In a small saucepan, warm the honey over low heat. Stir in red pepper flakes and let infuse for 5 minutes, then remove from heat.
- Spread the whipped ricotta on a serving platter. Arrange roasted carrots on top, drizzle with hot honey, and garnish with fresh herbs.
