A vibrant and healthy side dish featuring roasted beets and sweet potatoes, topped with crumbled feta and fresh cilantro for a burst of flavor.
Ingredients
- 2 medium beets, peeled and cubed
- 2 medium sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the cubed beets and sweet potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper until evenly coated.
- Spread the vegetables in a single layer on the prepared baking sheet. Roast for 25-30 minutes, stirring halfway, until tender and slightly caramelized.
- Transfer the roasted vegetables to a serving dish. Drizzle with lemon juice and top with crumbled feta and chopped cilantro. Serve warm.
