Description

A comforting and elegant pasta dish featuring cheese-filled ravioli tossed in a creamy, savory sauce with spinach and sun-dried tomatoes.


Ingredients

  • 1 lb cheese ravioli (fresh or frozen)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes (packed in oil, drained and chopped)
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh basil for garnish


Instructions

  1. Bring a large pot of salted water to a boil and cook the ravioli according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.
  3. Stir in sun-dried tomatoes and spinach, cooking until spinach wilts, about 2-3 minutes.
  4. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and the sauce thickens slightly.
  5. Add cooked ravioli to the skillet, tossing gently to coat in the sauce. Season with red pepper flakes, salt, and pepper.
  6. Serve immediately, garnished with fresh basil.
