Ingredients
- 2 boneless, skinless chicken breasts, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and garlic, sauté until softened, about 3-4 minutes.
- Add diced chicken to the pot and cook until browned on all sides, about 5-7 minutes. Season with thyme, salt, and pepper.
- Pour in chicken broth and bring to a simmer. Cook for 15 minutes until chicken is fully cooked.
- Stir in heavy cream, sun-dried tomatoes, and spinach. Simmer for another 5 minutes until spinach is wilted and soup is heated through.
- Adjust seasoning if needed. Serve hot with crusty bread or crackers.
