Description

A delightful appetizer featuring creamy whipped feta paired with sweet, caramelized roasted strawberries. Perfect for a sweet and savory experience.


Ingredients

  • 8 ounces feta cheese, crumbled
  • 4 ounces cream cheese, softened
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon black pepper
  • 1 pound strawberries, hulled and quartered
  • 2 tablespoons balsamic glaze
  • 1 tablespoon fresh mint, chopped (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a medium-sized bowl, toss the quartered strawberries with balsamic glaze. Spread them in a single layer on a baking sheet lined with parchment paper.
  3. Roast strawberries for 15-20 minutes, or until softened and slightly caramelized. Let them cool slightly.
  4. While strawberries are roasting, combine crumbled feta cheese, softened cream cheese, olive oil, lemon juice, and black pepper in a food processor.
  5. Process until completely smooth and creamy, scraping down the sides as needed.
  6. Transfer the whipped feta to a serving bowl or plate. Top with the roasted strawberries.
  7. Garnish with fresh chopped mint and serve immediately with crusty bread, crackers, or pita chips.

Notes

You can customize the seasonings to taste. For an extra kick, add a pinch of red pepper flakes to the whipped feta. Honey or maple syrup can be drizzled over the roasted strawberries for added sweetness.
