Ingredients
- 8 ounces feta cheese, crumbled
- 4 ounces cream cheese, softened
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon black pepper
- 1 pound strawberries, hulled and quartered
- 2 tablespoons balsamic glaze
- 1 tablespoon fresh mint, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- In a medium-sized bowl, toss the quartered strawberries with balsamic glaze. Spread them in a single layer on a baking sheet lined with parchment paper.
- Roast strawberries for 15-20 minutes, or until softened and slightly caramelized. Let them cool slightly.
- While strawberries are roasting, combine crumbled feta cheese, softened cream cheese, olive oil, lemon juice, and black pepper in a food processor.
- Process until completely smooth and creamy, scraping down the sides as needed.
- Transfer the whipped feta to a serving bowl or plate. Top with the roasted strawberries.
- Garnish with fresh chopped mint and serve immediately with crusty bread, crackers, or pita chips.
Notes
You can customize the seasonings to taste. For an extra kick, add a pinch of red pepper flakes to the whipped feta. Honey or maple syrup can be drizzled over the roasted strawberries for added sweetness.
