Description
A quick and flavorful Mediterranean-inspired beef stir-fry featuring tender beef, crisp zucchini, sweet cherry tomatoes, and salty feta cheese. Perfect for a weeknight meal.
Ingredients
- 1 lb beef sirloin or flank steak, thinly sliced against the grain
- 1 tbsp olive oil
- 1 large zucchini, thinly sliced into half-moons
- 1 pint cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 2 cloves garlic, minced
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 2 tbsp lemon juice
- 1 tbsp dried oregano
- Salt and freshly ground black pepper to taste
Instructions
- Season the sliced beef with salt, pepper, and 1 tablespoon of oregano.
- Heat olive oil in a large skillet or wok over medium-high heat. Add the beef and stir-fry for 3-4 minutes, until browned. Remove beef from the skillet and set aside.
- Add the red onion and zucchini to the skillet. Sauté for 3-5 minutes, until vegetables are slightly tender-crisp.
- Add the minced garlic and cherry tomatoes to the skillet. Cook for another 2-3 minutes, until tomatoes begin to soften.
- Return the cooked beef to the skillet. Stir in the remaining 1 tablespoon of oregano and lemon juice. Cook for 1 minute, tossing to combine.
- Remove from heat. Stir in the crumbled feta cheese and fresh parsley. Taste and adjust seasonings if necessary.
- Serve immediately, perhaps over couscous, rice, or with warm pita bread.
Notes
You can customize the seasonings to taste. For a spicier kick, add a pinch of red pepper flakes with the garlic. Other vegetables like bell peppers or spinach would also be delicious additions.
