Description

A quick and flavorful Mediterranean-inspired beef stir-fry featuring tender beef, crisp zucchini, sweet cherry tomatoes, and salty feta cheese. Perfect for a weeknight meal.


Ingredients

  • 1 lb beef sirloin or flank steak, thinly sliced against the grain
  • 1 tbsp olive oil
  • 1 large zucchini, thinly sliced into half-moons
  • 1 pint cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice
  • 1 tbsp dried oregano
  • Salt and freshly ground black pepper to taste


Instructions

  1. Season the sliced beef with salt, pepper, and 1 tablespoon of oregano.
  2. Heat olive oil in a large skillet or wok over medium-high heat. Add the beef and stir-fry for 3-4 minutes, until browned. Remove beef from the skillet and set aside.
  3. Add the red onion and zucchini to the skillet. Sauté for 3-5 minutes, until vegetables are slightly tender-crisp.
  4. Add the minced garlic and cherry tomatoes to the skillet. Cook for another 2-3 minutes, until tomatoes begin to soften.
  5. Return the cooked beef to the skillet. Stir in the remaining 1 tablespoon of oregano and lemon juice. Cook for 1 minute, tossing to combine.
  6. Remove from heat. Stir in the crumbled feta cheese and fresh parsley. Taste and adjust seasonings if necessary.
  7. Serve immediately, perhaps over couscous, rice, or with warm pita bread.

Notes

You can customize the seasonings to taste. For a spicier kick, add a pinch of red pepper flakes with the garlic. Other vegetables like bell peppers or spinach would also be delicious additions.
