Description
A southern hug in cookie form — creamy, crumbly, nostalgic. These delightful cookie sandwiches feature soft, banana-infused cookies embracing a rich, dreamy cream cheese frosting. A true taste of comfort and a perfect treat for any occasion.
Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup ripe mashed bananas (about 2-3 medium bananas)
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- For the Cream Cheese Frosting:
- 8 ounces cream cheese, softened
- 1/2 cup (1 stick) unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1-2 tablespoons milk or cream (optional, for consistency)
Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract and mashed bananas.
- In a separate medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers are set. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
- For the Cream Cheese Frosting: In a medium bowl, beat the softened cream cheese and butter together until smooth. Gradually add the powdered sugar, beating until well combined. Stir in the vanilla extract. If the frosting is too thick, add milk or cream one tablespoon at a time until desired spreading consistency is reached.
- Once cookies are completely cool, spread a generous amount of cream cheese frosting on the flat side of one cookie. Top with another cookie to create a sandwich. Repeat with remaining cookies and frosting.
- Serve immediately or store in an airtight container in the refrigerator.
Notes
You can customize the seasonings to taste. For an extra touch, sprinkle a pinch of flaky sea salt on top of the frosting before assembling. These cookies are best enjoyed at room temperature, so let them sit out for a few minutes if refrigerated.
