Description

A simple yet flavorful pasta dish featuring tender spaghetti, sautéed garlic, and fresh spinach, perfect for a quick weeknight meal.


Ingredients

  • 12 oz spaghetti
  • 4 cloves garlic, thinly sliced
  • 5 oz fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • Red pepper flakes, to taste
  • Salt and black pepper, to taste
  • 1/4 cup pasta water (reserved)


Instructions

  1. Cook spaghetti according to package directions in a large pot of salted boiling water. Before draining, reserve 1/4 cup of the pasta water.
  2. While the spaghetti is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the sliced garlic and red pepper flakes (if using) to the skillet and cook for 2-3 minutes, until fragrant and lightly golden. Be careful not to burn the garlic.
  4. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  5. Drain the spaghetti and add it directly to the skillet with the garlic and spinach.
  6. Add the reserved pasta water to the skillet, along with the grated Parmesan cheese. Toss everything together until the spaghetti is well coated and the cheese has melted into a light sauce.
  7. Season with salt and black pepper to taste. Serve immediately, garnished with extra Parmesan cheese if desired.

Notes

You can customize the seasonings to taste. For an added protein boost, consider adding grilled chicken or sautéed shrimp.
