Description

Ingredients
- 2 large sweet potatoes, peeled and sliced into 1/4-inch rounds
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons honey
- 1/4 cup crumbled feta cheese
- 2 tablespoons fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a large bowl, toss the sweet potato rounds with olive oil, salt, and black pepper until evenly coated.
- Spread the sweet potato rounds in a single layer on the prepared baking sheet.
- Roast for 20-25 minutes, flipping halfway through, or until the sweet potatoes are tender and slightly caramelized.
- Remove from the oven and arrange on a serving platter.
- Drizzle honey generously over the roasted sweet potato rounds.
- Sprinkle with crumbled feta cheese and chopped fresh parsley, if desired.
