Description

Sweet potato rounds roasted until tender and caramelized, then drizzled with honey and crumbled feta cheese. A delightful balance of sweet and savory.


Ingredients

  • 2 large sweet potatoes, peeled and sliced into 1/4-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons honey
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)


Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, toss the sweet potato rounds with olive oil, salt, and black pepper until evenly coated.
  3. Spread the sweet potato rounds in a single layer on the prepared baking sheet.
  4. Roast for 20-25 minutes, flipping halfway through, or until the sweet potatoes are tender and slightly caramelized.
  5. Remove from the oven and arrange on a serving platter.
  6. Drizzle honey generously over the roasted sweet potato rounds.
  7. Sprinkle with crumbled feta cheese and chopped fresh parsley, if desired.

Notes

You can customize the seasonings to taste. For a hint of spice, add a pinch of chili powder or smoked paprika before roasting. Adjust the amount of honey and feta to your preference.
